  • In May 1893, Irma de Montigny, a seductive courtesan, entered a small bistro located at 3 rue Royale. This place had been opened a few days earlier by Maxime Gaillard, a waiter. The legend of Maxim's began then, this restaurant very quickly becoming the "gallant" meeting place of the Belle a‰poque.
