A round Languedoc wine, whose tannins are present and well blended. Ideal with grilled red meat, perfect with cheeses.
This wine is produced with the fruits of sustainable viticulture, in conversion to Organic Farming, without herbicides, synthetic pesticides or chemical fertilisers. The grapes are harvested early in the morning, at optimum grape ripeness, and then worked only with physical processes, without yeasts or other fermentation activators. Each grape variety is vinified separately to be blended one month before bottling, allowing them to express their full potential. A light sulphiting is carried out before bottling to preserve the qualities of the wine, at a dosage three months below the Organic Agriculture standards.
