Partial and traditional vinification in wooden barrels (70%) contributes to greater complexity without premature oxidation. The wine does not undergo malolactic fermentation, so the natural acidity balances the terroir's strength. For the 2014 vintage, 30% of the wine was made as a saignée rosé, with a cold maceration before fermentation. The low dosage (4.5 g/l) emphasizes the vinosity and minerality of this exceptional vineyard. The wine is aged for a long time (10 years) at a constant temperature of 12°C in the estate's historic cellars in Mareuil-sur-Ay.
