Sara Pérez is the wife of René Barbier, who produces the famous Clos Mogador, Espectacle, and Manyetes wines. Sara Pérez also heads the family estate, Clos Martinet. She also works closely with her brother, Adria, at Cims de Porrera. Her father, José Luis Pérez, a key figure in the Spanish wine world, is proud of his children. He remains active in various wine projects. Together with her husband, René Barbier (Clos Mogador), Sara Pérez owns and vinifies superb wines at Venus La Universal. As a tribute to every small food producer from the 1920s who aspired to become great, Sara named this mini-estate Compania Universal de Vinos. This Dido Rosat is made with different types of Garnatxa (Grenache) (grey, red, and white), as well as Macabeu and Carinyena to provide acidity and reduce the alcohol content. The 2022 Dido Rosa was not bottled until mid-March 2024. The Dido La Solució Rosa is a blend of: Garnatxa negra 50% Macabeu 20% Ull de Llebre 15% Carinyena 10% Garnatxa blanca 2,5% Garnatxa gris 2,5% After all the grape varieties were pressed simultaneously, the majority of the grapes were fermented in old oak barrels. The fermentation process was lengthy, lasting a full 6-9 months. This process was then followed by 16 months of aging in a 60-year-old 4000-liter oak foudre and a 3000-liter clay pot, which constitutes the entire production. It has more acidity and freshness, but also boasts superb complexity thanks to its long aging in used barriques. The acidity gives it a very young feel. This will develop further in the bottle, which is unusual for a rosé. But this rosé is unusual, and Parker writes: " In fact, I wouldn't even call it a rosé. If you want to surprise someone, open a bottle of this. A rosé that is more white than the white... " This is truly beautiful, like all Sara Pérez Venus wines, and is a wine that can age wonderfully, in the style of the Tondonia Rosé.
