Joseph Colin and his winemaking family The name Joseph Colin has quickly become a household name in Burgundy. He grew up in one of the region's most renowned winemaking families. His father, Marc Colin , was known for decades as one of the leading producers in Saint-Aubin and the surrounding appellations. His brother, Pierre-Yves Colin-Morey , is today considered one of the most famous and sought-after winemakers in the Côte de Beaune. Against this backdrop, Joseph decided to establish his own estate in 2016. In doing so, he continues the family tradition while giving it his own signature: purity, elegance, and always focused on the expression of the terroir. The location of the vineyard Les Hauts de la Combe The Bourgogne Blanc Les Hauts de la Combe wine comes from a plot strategically located within the Bourgogne Blanc appellation. This vineyard benefits from chalky soils and a relatively cool location. The result is a Chardonnay that combines tension, freshness, and minerality. The altitude and exposure also allow for slow ripening, which refines the grapes' aromatic profile. This terroir forms the basis of a wine that, despite its regional appellation status, offers remarkable complexity and depth. Climate and conditions in 2023 The 2023 vintage in Burgundy offered a balance between warmth and coolness. Summer heat alternated with periods of rain, providing the vineyards with much-needed refreshment. For Chardonnay, this resulted in grapes with ripe fruit, healthy acidity, and a fresh minerality. These conditions perfectly suited the style of Joseph Colin, known for his pursuit of tension and clarity in his wines. The result is a wine that already offers considerable charm but can also handle several years of bottle aging. Vinification and maturation Joseph Colin opts for minimal intervention in the cellar, allowing the vineyard and grapes to express themselves to the fullest. The grapes are carefully harvested and pressed. Fermentation takes place using natural yeasts, enhancing the wine's authenticity. For aging, he uses a combination of oak and stainless steel barrels. A portion of the wine is aged in used barrels to develop subtle complexity and structure, without the oak dominating the character. This way, the wine retains its fresh style, with a touch of roundness that completes the balance. Tasting note of the 2023 Bourgogne Blanc Les Hauts de la Combe The wine opens with a tight, minerally, perfumed bouquet, where flint and citrus set the tone. As the wine develops in the glass, layers of ripe apple, white blossom, and a hint of almond emerge. The palate is lively and energetic, with a striking freshness and a salty note. The acidity is refined and carries the wine to a long, slightly spicy finish. This combination of tension and finesse makes the 2023 a classic Bourgogne Blanc with a modern signature . Internationally acclaimed wine critics have already described this cuvée as a model of class in its category. Storage potential and serving advice Although this wine offers great drinking pleasure even when young, thanks to its vibrant fruit and fresh acidity, it's worth keeping a few bottles. Between 2025 and 2030, the wine will develop further and show more depth, with nutty and honeyed notes alongside the fruity profile. Serve the wine preferably at 10-12°C to best emphasize its minerality and freshness. Wine and food pairings The 2023 Bourgogne Blanc Les Hauts de la Combe is versatile at the table. Some excellent pairings include: Grilled sea bass with lemon and fresh herbs, where the fresh acidity enhances the structure of the fish. Risotto with green asparagus and Parmesan, in which the creaminess is nicely broken up by the minerality of the wine. Goat cheese salad with walnuts and honey, a classic combination that balances fruit and creaminess. Scallops with cauliflower cream, where the delicate notes of the wine blend with the soft sweetness of the scallops. Grilled chicken with tarragon and a light sauce
