He monitored the vineyards year-round so he knew exactly where to pick his Cabernet Sauvignon grapes. He sought power, depth, and structure, complemented by a touch of oak aging. Using old-style open-top fermenters, the wine was hand-dipped and subsequently aged in large-format barrels to foster complexity, rather than open oak. As you would expect from the Whip-Hand, this delivers a powerful, very full bite. Deep dark red with a brick-coloured rim to indicate age. Softly roasted blackberries, cassis, and plums with some spices, tobacco, and leather revealing the wine's maturity.
