One of the upcoming stars of the Valdeorras is winery Val De Sil, which focuses strongly on the Galician grape Godello and the red Mencia. The bodega has its vineyards in the Sil valley with its unique slate soils which make the wines of this house unique. The Valderroa Carballo Mencia comes from older Mencia vineyards. The wine is fermented in stainless steel and the malolactic fermentation was carried out in 500-litre French oak barrels, after which the wine is allowed to develop for 10-12 months in used French oak. By the way, carballo means Oak. Valderroa Carballo is a wine made exclusively with the oldest Mencía pezas (plots) in Valdeorras. These pieces are found on the extremely steep slopes and northern exposure of the municipality of Carballeda de Valdeorras, the highest elevation in Galicia, where the world's purest black slate rock outcrops. The vineyard is between 60-105 years old and is located at an altitude of 600-800m with a slope of 45%; It is a benchmark of so-called "extreme viticulture". A wine for aging that explores the more intellectual and vertical side of the Mencia variety. The Valderroa Carballo Mencía is an elegant medium bodied wine with notes of leather, ripe red fruits, spices and cherries. The palate feels polished, with some heat balanced by good acidity.
