The Juan Gil Bruto is a wine produced in very small quantities and comes from a very old vineyard with Monastrell (Mourvedre in French) vines. Vinification takes place in stainless steel tanks at a maximum temperature of 25ºC. After maceration-fermentation has been carried out, it is transferred to French and American oak barrels to undergo malolactic fermentation, where it remains for aging. The Juan Gil Bruto has a cherry-red color with purple reflections at the edges. On the nose, aromas of ripe black fruit, toasted notes, leather, espresso, and cocoa. Full-bodied on the palate with liqueur notes, good structure, and a long, balanced finish. This wine cries out for roast beef or game, creamy rice, braised vegetables, mushrooms, and our favorite is with stews such as a hachee. As a meditation wine, it is fantastic with blue cheeses.
