  • Description
The specific style of Billecart-Salmon champagne is thanks to Jean Roland-Billecart. In the late 1950s, he introduced a method of fermentation in which – among other things – the temperature does not exceed 13° C. This slows down the fermentation process, giving all the delicate aromas the opportunity to fully develop. The long maturation on the lees (the sediment) that follows gives the wine a unique clarity and purity. The result is fresh champagnes, with a lot of finesse and fine bubbles. It is not without reason that Billecart-Salmon is among the top ten most appreciated champagnes and is the darling of sommeliers in top gastronomic restaurants. Billecart-Salmon Brut Rosé is a champagne from the house Billecart-Salmon from the French town of Mareuil-sur-Aÿ. It is an extra brut champagne, which means that it contains little sugar. It has a pink color, which is obtained by a short maceration of the grapes. The taste is elegant and fruity with notes of strawberries, raspberries and citrus. Billecart-Salmon Brut Rosé is a good choice for a festive occasion or as an aperitif. FACT: In the Tab: Attachment you will find the official fact sheet of this beautiful wine. WINE-FOOD SUGGESTIONS Tuna tataki with sesame and soy sauce The umami of the tuna and the salty touch of the soy sauce are beautifully balanced by the fresh acidity and red fruit of the champagne. Scallop carpaccio with lime and pomegranate seeds The delicate taste of scallops pairs perfectly with the elegant mousse, while the lime and pomegranate enhance the fruity character of the champagne. Duck breast with raspberry sauce The juicy meat and fruity sauce match perfectly with the red fruit aromas of the Brut Rosé, with the acids of the champagne as a fresh counterpart. Smoked salmon with dill and lemon cream The smoky salmon is refreshed by the lively bubbles, and the lemon cream complements the fresh notes of the champagne. Raspberry tart or macarons with red fruit This rosé champagne also shines with a light dessert, especially with red fruit desserts, thanks to its subtle sweetness and fresh acidity. In Perfect Harmony with Pierre Hermé Pastry Chef, Maison Pierre Hermé “ The first time I had the opportunity to taste the Brut Rosé cuvée, and it was a long time ago now, was at the restaurant of Alain Passard. What I liked straight away was the vinous dimension of this cuvée. You can sense that behind the champagne there is a real wine there. Next it begins to unveil itself more intimately, with notes of citrus fruits and red berries which are more subtle and elegant. This cuvée showcases the mastery and knowledge of balance. It's this subtle Delicateness, born from Harmony and Finesse in the Brut for me, this champagne is an iDeal partner to accompany the desserts. Sert Pairs Perfectly With This Cuvée And Its Citrus Personality! ray of sunlight that transcends the beauty of the moment. ”
