- Description
Domaines Paul Mas was founded in 1892. The current owner, Jean-Claude Mas, is undoubtedly the pioneer in the Languedoc's revival as a region for quality wines. Jean-Claude characterizes his wines as "Le Luxe Rural," or rural luxury. Using international grape varieties, he has given the Languedoc a "New World" allure. And with his fashionable wines made from local grapes, he has made the Languedoc's local character fashionable again among wine lovers. Hubrecht Duijker rightly calls Jean-Claude Mas a "wine wizard," and at , we are the only winery in the to also carry Paul Mas's high-end Grandcrus . Eighteen years after the beginning of the Domaines Paul Mas adventure, Jean-Claude Mas took on a new challenge: designing a wine project from scratch to produce top-quality wines. He created Clos Astelia from scratch, an estate concentrating the best plots, a state-of-the-art winery inspired by nature, and meticulous biodynamics. Astelia is the birthplace of a new winemaking tradition in the Languedoc. Astelia is a combination of the letters of Jean-Claude's four daughters: Astrid, Elisa, Apolline, and Estelle. The Clos Astelia Le Grand Blanc is a blend of Grenache Blanc, Viognier, and Piquepoul. It comes from the IGP Terre du Midi appellation. The wine is certified organic. The vineyards are located at an altitude of 120 meters on gravelly clay-limestone soils with black clay. All the grapes are harvested by hand. The entire vinification process The process is gravity-assisted. Whole bunches are crushed, with each grape variety fermented separately for 3 to 4 weeks at 16°C. The first part of the fermentation takes place in barrels and then in oak barrels. After malolactic fermentation, the wine is Aged for 5-7 months in oak barrels. The wine is bottled without the addition of sulphites and then matured for some time in the bottle. The Clos Astelia Le Grand Blanc has a brilliant, clear golden color in the glass, with subtle and elegant notes of currant, rose, white fruit, and licorice on the nose, along with hints of vanilla and spice. This Le Grand Blanc is powerful, with a fresh, balanced, and round mouthfeel, featuring some oak and minerality. On the finish. Serve this beautiful wine not too cold (12°C). This is a wonderful glass to enjoy on its own and is perfect with fish dishes, mixed salads, and light cheeses such as brie, goat cheese, and Ossau Iraty. This is also a wine that keeps well, provided it is properly stored. Besides the contents, the bottle itself is a beautiful addition to the table. The vineyard, the house, the cellars, the bottle, my daughters Astrid, Elisa, Apolline, and Estelle are ASTELIA. In 1998, my first wine was a Cabernet Sauvignon-Syrah blend, the fruit of my experience with great terroirs. It is also the result of an ambition: to demonstrate that the Languedoc is the land of the greatest Cabernet Sauvignon. This wine is above all the culmination of the dream that fuels my passion, a symbol of "country luxury ."
