- Description
The specific style of Billecart-Salmon champagne is due to Jean Roland-Billecart. At the end of the 1950s, he introduced a method of fermentation in which – among other things – the temperature does not exceed 13° C. This slows down the fermentation process, allowing all delicate aromas to fully develop. The long aging on the lie (the sediment) that follows gives the wine a unique clarity and purity. The result is fresh champagnes, with a lot of finesse and fine bubbles. It is not for nothing that Billecart-Salmon is one of the top ten most appreciated champagnes and is the favorite of sommeliers in top gastronomic restaurants. It is difficult not to talk in the superlative with the champagnes from Billercart-Salmon. This is also the case with this tantalizing Blanc de Blancs. This cuvée is made from the four Grand Cru vineyards of the Côte des Blancs: Avize, Chouilly, Cramant, Mesnil-sur-Oger. This cuvée is a blend of two different years that reveals the special quality of the Chardonnay. Its complexity, great vinosity and surprisingly fresh finish are especially appreciated by the most informed wine lovers. The Billecart-Salmon - Blanc de Blancs Grand Cru has a delicate bubble with a surprising combination of almond and fresh fruit such as apple and pear in the nose. Wonderfully lively in the mouth with a nice depth. Except as an aperitif also excellent with oysters! GOOD FACT: In the Tab: Attachment you will find the official fact sheet of this Champagne Billecart-Salmon Brut Réserve. In Perfect Harmony with Luc Mobihan Chef at the Restaurant Saint Placide*, Saint Malo “ The first time I tasted a cuvée from Maison Billecart-Salmon, it was on my 20th birthday. A day that I will never forget! More often than not I taste the Blanc de Blancs Grand Cru cuvée from magnum. The 100% Chardonnay fully reveals itself in this format. I like the mineral aspect which is taut, vivid and with a slight richness. A perfect balance between delicacy and elegance with a finish that is strengthened by the minerality. In Saint Placide, we propose a smoked salt turbot. The natural flavor of the turbot and the contrast with the smoked salt is revealed by the finesse and the persistence on the palate. The harmony is evident with this exceptional cuvée. For me, any place is perfect for tasting the Blanc de Blancs Grand Cru. From the very first sip, you know that it's going to be a great experience in an ideal location and especially if you're in good company on an island off the coast of Saint-Malo, for a simple picnic away from it all except for the pleasures of that exact instant. A moment that is just magic. ”
