- 5 eggs
- 100 g flour
- 100 g sugar
- 30 g butter
- Angelina chestnut cream
- The realisation
- Preheat the oven to 210°C (thermostat 7). Butter the mould.
- Put the egg yolks, sugar and a sachet of vanilla sugar in a salad bowl. Stir well until lightened. Add the sifted flour and mix well.
- Then add the melted butter and stiffly beaten egg whites.
- Place the mixture in the rectangular baking dish and bake in the oven until golden brown. Cook very quickly (5 minutes) because the biscuit must not be dry.
- When it is cooked, roll it up in a damp cloth. Once it has cooled down, unroll it and spread the chestnut cream on it, then roll it up again.
- It is possible to sprinkle icing sugar on the roll after rolling it up with a sieve.
